Brinjal Fry

Ingredients

  • Brinjal /Egg plant  - 8 small/medium size
  • Oil - 4 tbsp
  • Dry red chillies - 6nos
  • Chana dal/kadala parippu - 2 tbsp
  • Urad dal  - 2 tbsp
  • Fenugreek seeds - 1/4 rsp
  • Corriander seeds  - 1tbsp
  • Cumin seeds  - 1 tbsp
  • Tamarind -  small lemon size cut into small pieces
  • Garlic  - 2 flakes thinly sliced
  • curry leaves - few
  • Turmeric powder - 1/4 tsp
  • Asafoetida - 1 pinch
  • Pepper corns - 1 tsp
  • Corriander leaves - 1/4 cup
  • salt as required

Method of preparation

  • Cut the egg plant into 4 quarters,keeping the end intact.
  • Heat 1 tbsp oil in a pan and half fry the egg plant on medium low flame.cook for 1 min and keep aside.

Masala preparation for stuffing (stage wise)

  • Heat 1 tbsp oil in the pan.
  • Add dry red chillies and stir for few seconds.(make sure to keep the flame on medium low).
  • Then add  chana dal and stir along with red chillies.cook till light brown.
  • Now add urad dal to it and fry for few sec and add fenugreek seeds,coriander seeds,cumin seeds & pepper corns.
  • Roast all the ingredients on medium low flame.do not burn the ingredients.
  • Add tamarind,thinly sliced garlic and curry leaves.stir for few seconds.
  • Next add asafoetida ,turmeric,salt and cook all the ingredients till it becomes dry.
  • Allow the ingredients to cool and powdered it in a mixer grinder.
  • Taste the powder and check for salt ,if needed add accordingly.

Method of frying

  • Take egg plant and stuff this masala into it and keep aside.
  • Heat 2 tbsp oil in a pan and arrange the egg plant,close the lid and cook on medium  flame.
  • In between open the lid and sprinkle a little salt into it and cook till it done.
  • when it is completely cooked add finely chopped coriander leaves.
  • Egg plant /Brinjal fry is ready......!!!!
