Inji Curry

Ingredients

  • ginger - 1/4 kg grated
  • Green chilly - 6 finely chopped
  • Curry leaves - 2 sprigs
  • Tamarind - 1 lemon size
  • Jaggery - 5o gm grated
  • Salt to taste
  • Oil - 5 tbsp
  • Mutard seeds -1 tsp
  • Dry red chilly - 2 nos

Method of preparation

  • Heat 4 tbsp oil in a pan add grated ginger and fry it till it become golden brown,remove it from the pan and keep aside.
  • Soak tamarind in 1/4 cup of water extract the juice.
  • Fry the green chilly in the same pan. remove it and keep aside.
  • Heat 1 tbsp oil in a pan sputter mustard seeds ,add dry red chilly,curry leaves saute for few sec and add fried ginger and green chilly in it, mix well.
  • Next add grated jaggery in it mix well and add tamarind juice and cook till it become thick.add salt to taste.
  • Inji curry onam special is ready.....
