Ingredients
- ginger - 1/4 kg grated
- Green chilly - 6 finely chopped
- Curry leaves - 2 sprigs
- Tamarind - 1 lemon size
- Jaggery - 5o gm grated
- Salt to taste
- Oil - 5 tbsp
- Mutard seeds -1 tsp
- Dry red chilly - 2 nos
Method of preparation
- Heat 4 tbsp oil in a pan add grated ginger and fry it till it become golden brown,remove it from the pan and keep aside.
- Soak tamarind in 1/4 cup of water extract the juice.
- Fry the green chilly in the same pan. remove it and keep aside.
- Heat 1 tbsp oil in a pan sputter mustard seeds ,add dry red chilly,curry leaves saute for few sec and add fried ginger and green chilly in it, mix well.
- Next add grated jaggery in it mix well and add tamarind juice and cook till it become thick.add salt to taste.
- Inji curry onam special is ready.....
